Allergenicity: | Eigth patients with IgE-mediated food allergy to natto (soybeans fermented with Bacillus subtilis subsp. natto) were tested. All patients had immediate allergic reactions after ingestion of natto as well as positive SPT with natto. Of these patients, 4/8 (50%) had IgE to a 30 kDa protein from natto as well as from an extract from cultured B. subtilis subsp. natto detected by IgE immunoblot. The protein was identified by immunoblot inhibition with commercially available nattokinase and by mass spectrometry. Moreover, all 4 sera reacted to nattokinase in ELISA. Three patients were also tested with nattokinase by SPT and showed a reaction to the protein. Purity of the purchased nattokinase was confirmed by mass spectrometry. |
